If you hadn’t already noticed, I absolutely love sweet potatoes; the flavour, the texture…absolute perfection. There are so many ways that you can cook and eat them. The orange ones are my favourite; not only are they healthier, but they cook in virtually no time at all, and go down a treat with a number of dishes. Mix all of this sweet and healthy goodness, with some lightly spiced oven baked salmon and a side of greens, and voila – you have a guilt free mouth-watering meal; in less than 30 minutes.
This is a dish that is so fast and easy to make I could literally cry with happiness. If you are anything like me then you love cooking, but you hate spending hours in the kitchen. Quick, easy no fuss meals are what you are all about, and this is one of them. With this recipe you are guaranteed to enjoy the cooking process but love the eating even more. Simple yet satisfying – Enjoy!
Preparation & cooking time: 25 minutes
Serves: 1
Ingredients
For the salmon and sweet potato
- 1 tbsp salted butter
- 1 salmon filet
- ½ tsp garlic powder
- ½ tsp salt
- 1/2 tsp black pepper
- 1 medium-large sweet potato, sliced
For the honey and lemon glaze (optional)
- 1 lemon
- 1 tbsp of honey
Method
Preheat the oven to 220?C.
Grease a baking tray with butter and season the fish with garlic, salt, and pepper.
Squeeze the lemon and honey into a bowl, and pour half of it over the salmon (optional).
Place the fish (skin-side down) and sweet potato on the tray and bake for 20 minutes.
Remove from the oven and plate up the salmon and potatoes. Pour the remaining glaze over the salmon and serve.
Serving
I threw in a side of broccoli to make it extra healthy, but this also goes perfectly with green beans, asparagus, peas, or a side of fresh leafy salad.
This dish is amazing; the flavours complement each other perfectly. I love how eating healthy makes me feel and of course how it makes me look as well. This is the perfect meal for dieters but also for those who simply want to feel healthier and have a light and refreshing meal.
Please note: Salmon isn’t always an option in Zambia but you can substitute the salmon with a local fish like Tilapia or Kariba bream, in which case forgo the honey and lemon glaze completely (but always be careful with the fish bones).

Well done Kanta for minding Locally Sourced food. About forgoing the Lemon and honey glaze, note Lemon goes with all Fish.
Since Bream and Tilapia is a bit like Sea Bass, it will work to take an example from oriental cooking.
Usually they use a little of finely chopped Ginger and Spring Green Onion flash fried in a little vegetable oil until onion wilts and ginger is cooked ( start with the ginger and add spring onions later). This will add a nice fragrance and taste to a boring white fish.
Wilted whole Spring green will replace your Asparagus Spears which I note from your picture is tucked under the broccoli…..ssssshh!
Oh forgot the garlic!
Did not see the asparagus from the broccoli. Happens to me all the time …….
