The reason why I love pasta so much is because it’s fast and easy to make, it comes in different shapes and sizes, and you can eat it and serve it with near enough anything. One of my favourite ways to eat pasta is in a salad, contrary to popular belief; pasta needn’t be hot, so try this pasta salad for your lunch, a picnic or a side dish with
your main meal. Enjoy.
Ingredients

Serves: 15
- 450g pasta
- 2 large tomatoes, chopped
- 1 green pepper, chopped
- 1 yellow bell pepper, chopped
- 1 cucumber, chopped
- 170g black olives
- Italian style salad dressing, or mayonnaise or a dressing of your choice
- Pepperoni, chicken or any meat
Directions
Bring a large pot of lightly salted water to a boil. Cook the pasta according to the instructions on the packet, stirring occasionally, until it is cooked through yet about 12 minutes; drain and rinse pasta in cold water until cool.
Toss the drained pasta, tomatoes, green bell pepper, yellow bell pepper, cucumber, black olives, and pepperoni (or the meat of your choice) together in a large bowl.
Pour the Italian-style dressing (or the dressing of your choice) over the pasta mixture; and toss to coat.
Chill the salad for 20 minutes before serving.
Serving
Serve cool, as a side dish or enjoy as your main meal.
